Beef Tallow Fries

Ingredients
4 to 6 large Russet Potatoes (more if smaller)
OR sweet potatoes
several cups Beef tallow (enough to be 2 inches deep in your pan)
Seasonings of your choice
Ketchup (for serving, if desired)
Dipping sauce (for serving, if desired)
Mustard (for serving, if desired)
Pickles (for serving, if desired)

Step by Step Instructions
  1. Begin heating the tallow in a deep fryer or tall sided pan (350 to 360 degrees). Peel the potatoes and cut them into sticks while the tallow warms.
  2. Working in batches, carefully lower fries into the tallow, stirring once or twice to ensure even cooking.
  3. Carefully remove the fries and put them onto a plate lined with paper towels and season them immediately. Repeat until all fries are cooked. Serve with condiments of your choice.
